The Classic Method is the father of methods, the oldest.

It originates in France, specifically in the region known as Champagne. It is a sparkling wine production process that consists of inducing the re-fermentation of wines in the bottle through the introduction of sugars and selected yeasts.
Its secret lies in the re-fermentation in the bottle and the long ageing on the fermenting yeasts, capable of transferring elegance, refinement and complexity.

The Classic Method is a method that represents us and that we embraced from day one, to enhance our grapes and in search of a new expression of Emilian wine.

FIVI

FROM BUNCH TO BOTTLE

The Independent Winegrower cultivates his vineyards, vinifies his grapes, bottles his wine and personally oversees the sale of it, under his own responsibility, with his own name and label. Engaged daily in a process that follows the entire production chain, the Vignaioli work constantly to preserve, protect and promote their territory.

From November 2023, Cantina Ventiventi joins the Italian Federation of Independent Winegrowers (FIVI): a network that unites realities of different sizes and types, united by a love for the land and rigorous attention to each production step carried out in the first person.
