CHAMPENOISE METHOD SPARKLING WINE

Grapes: 100% produced with Salamino di Santa Croce grapes from estate  vineyards
Soil: clayish
Planting density: 3000plants/ha
Fruit tree forms: unilateral guyot with 13-14gems
Colour: intense ruby red.
Aroma: delicate and refined, with flower and wild berries scents. 
Taste: wide and complex, marked by an outstanding freshness and a  pleasant and full-flavored foam.
Food pairings: thanks to its typical freshness it is versatile wine, ideal with  the typical Emilian cuisine (fried gnocco, tigelle and coldmeats).
Serving temperature: 8-10C°

Vinification:

  • Mechanical harvest in the coldest hours of the day  
  • Further cooling of the grapes*
  • Short press maceration *  
  • Soft pressing*
  • Fermentation under low temperatures in a stainless steel tank
  • Prolonged cold refinement in steel*
  • Addition of must and secondary fermentation in the bottle under controlled  temperature
  • Long refinement under controlled temperature and humidity

* Phases of the process in which the environment has been made inert with  nitrogen in order to limit the sulphur dioxide use
