Grapes: 85% Chardonnay, 15% Sorbara grapes

Fruit tree forms: unilateral guyot with 13-14gems
Colour: bright straw-yellow, with delicate greenish reflections
Aroma: fresh green-apple scent, complexed with the gentle notes deriving  from the sparkling wine-making process. Wide minerality with patisserie  hints.
Taste: in line with its aromas, it stands out for its marked minerality and  outstanding freshness that make it vibrant and enveloping.
Food pairings: recommended for structured dishes, seafood and raw food,  but even for a light aperitivo.
Serving temperature: 10-12C°.

Vinification:

• Mechanical harvest in the coldest hours of the day  
• Further cooling of the grapes*
• Soft pressing*
• Fermentation under controlled temperatures in a stainless steel tank  
• Prolonged cold refinement in steel*
• Addition of must and secondary fermentation in the bottle under controlled  temperature
• Long refinement under controlled temperature and humidity

*Phases of the process in which the environment has been made  inert with nitrogen in order to limit the sulphur dioxide use
